There are two ways to control firmness of the paneer in the press:
(1) By the amount of milk you use. The more milk is used per press, the harder the paneer gets. A maximum of 3.5 liters is advised.
(2) By the duration of pressing. Press your paneer only for 1 hr for soft, and for 5 hours or even overnight for hard paneer.
No. Paneera works without cloth. It is just important to properly curdle the milk (the curdled milk/whey is clear). If your milk does not properly curdle (whey is still milky), add more acid, heat up the milk and steer for 5 minutes.
